Mission: Oyster South, a 501 (c)(3) charitable organization, connects communities and provides resources to support oyster farmers, cultivate thriving communities, promote healthy waters and celebrate good food in the southern United States.

We continue to set the table for successful oyster farming, which builds thriving coastal communities and strengthens the greater oystering world. We champion the appreciation of Southern farm-raised oysters, the health of our waters, and the preservation of historic foodways.

Creating Community: We lift up and empower Southern oyster farmers. But we don’t stop there; we widen our net to include the industry’s multiple stakeholders — gear suppliers, research scientists, food distributors, chefs, and restaurant owners and more — to build a vibrant community.

Collaboration: As a community, we work together. We share information, pool knowledge and experiences, and drive practical research that seeks creative solutions to challenges.

Celebrating Culture: We love eating oysters together. We gather and connect over good food with good people. We honor the oyster’s key role in our region’s foodways and its water-working heritage, and we advance oyster farming’s unique and critical role in the future.

Environmental Conservation: We embrace, demonstrate, and enhance Southern oyster farming’s inherent regenerative and environmentally friendly features.
